Ingredients

  • 8 oz spaghetti
  • 2 cups shredded roast chicken
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil leaves for garnish

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.

  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant.

  3. Add the diced tomatoes, dried basil, dried oregano, red pepper flakes (if using), salt, and pepper to the skillet. Stir well to combine.

  4. Allow the sauce to simmer for about 10 minutes, stirring occasionally.

  5. Add the shredded roast chicken to the sauce and stir to incorporate. Cook for an additional 5 minutes to heat the chicken through.

  6. Add the cooked spaghetti to the skillet with the sauce and chicken. Toss well to coat the pasta evenly.

  7. Serve the roast chicken spaghetti hot, garnished with grated Parmesan cheese and fresh basil leaves.
