Ingredients

  • 4 chicken thighs, skin on
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups chicken stock
  • 2 tablespoons all-purpose flour
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the chicken thighs in a roasting pan and season with salt and pepper.

  3. Roast the chicken in the oven for about 40 minutes, or until the internal temperature reaches 165°F (74°C).

  4. Remove the chicken from the pan and set aside to rest.

  5. Place the roasting pan on the stovetop over medium heat.

  6. Add the diced onion and minced garlic to the pan and sauté until they are translucent and fragrant.

  7. Sprinkle the flour over the onions and garlic, and cook for a minute, stirring constantly.

  8. Slowly pour in the chicken stock, stirring constantly to avoid lumps.

  9. Bring the gravy to a simmer and cook for a few minutes, until it thickens.

  10. Season with salt and pepper to taste.

  11. Remove from heat and strain the gravy to remove any lumps or solids.

  12. Serve the roasted chicken with the pan gravy drizzled over the top.
