  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1/4 cup melted butter
  • 1/4 cup sugar
  • 2 jalapenos, seeded and diced
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a round cake pan or cast-iron skillet.

  2. In a large bowl, combine the cornmeal, flour, baking powder, and salt.

  3. In a separate bowl, whisk together the milk, vegetable oil, melted butter, and sugar.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Fold in the diced jalapenos, corn kernels, and shredded cheddar cheese.

  6. Pour the batter into the prepared pan and smooth the top with a spatula.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  8. Let the cornbread cool for a few minutes before serving. Enjoy!
