How To Make Linguine with Avocado, Tomato & Lime

Ingredients
- 8 ounces of linguine
- 2 ripe avocados
- 2 large tomatoes, diced
- 1 lime, juiced
- 2 cloves of garlic, minced
- 1/4 cup of chopped fresh cilantro
- Salt and pepper, to taste
Instructions

Cook the linguine according to package instructions until al dente. Drain and set aside.

In a large bowl, mash the avocados with a fork until smooth.

Add the diced tomatoes, lime juice, minced garlic, chopped cilantro, salt, and pepper to the mashed avocados. Mix well.

Add the cooked linguine to the avocado mixture and toss until the linguine is well coated.

Serve immediately and garnish with additional cilantro, if desired.
