  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 carrot, grated
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Rinse the quinoa and cook it according to package instructions.

  2. In a large bowl, mix together cooked quinoa, cucumber, bell pepper, carrot, red onion, and parsley.

  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

  4. Pour the dressing over the quinoa mixture and toss until well combined.

  5. Serve chilled or at room temperature.
