  • 4 salmon fillets, skinless
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 2 tomatoes, diced
  • 1 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add the onions and cook until they turn translucent.

  2. Add the garlic and ginger to the pan and sauté for a minute.

  3. In a small bowl, mix together cumin powder, coriander powder, turmeric powder, and chili powder. Add this spice mixture to the pan and cook for another minute.

  4. Pour in the coconut milk and vegetable broth to the pan and stir well. Bring the mixture to a gentle simmer.

  5. Add the diced tomatoes and season with salt. Simmer for 5 minutes until the tomatoes soften.

  6. Carefully place the salmon fillets into the pan, making sure they are submerged in the curry sauce. Cover the pan with a lid and cook for 10-12 minutes, or until the salmon is cooked through.

  7. Serve the salmon curry hot, garnished with fresh cilantro.
