  • 4 salmon fillets
  • 2 tbsp red curry paste
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. In a large pan, heat some oil and add red curry paste. Cook for 1 minute until fragrant.

  2. Add coconut milk, chicken broth, fish sauce, and brown sugar. Stir well to combine.

  3. Bring the sauce to a simmer and add salmon fillets. Cook for 5 minutes.

  4. Add red bell pepper and snap peas. Cook for another 5 minutes or until the salmon is cooked through.

  5. Squeeze lime juice over the curry and stir gently to combine.

  6. Serve the Red Thai Salmon Curry over steamed rice or noodles. Garnish with fresh cilantro.
