How To Make Chicken with Pumpkin & Chickpeas

Ingredients
- 4 chicken breasts
- 2 cups pumpkin, diced
- 1 can chickpeas, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin powder
- 1 tsp paprika
- 1/2 tsp turmeric powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Fresh cilantro, for garnish
Instructions

Heat olive oil in a large skillet over medium heat.

Add onions and garlic, sauté until fragrant and translucent.

Add chicken breasts to the skillet and cook until browned on both sides, about 5 minutes per side.

Add diced pumpkin, chickpeas, cumin powder, paprika, turmeric powder, salt, and black pepper to the skillet. Stir to combine.

Cover the skillet and simmer for 30 minutes, or until the chicken is cooked through and the pumpkin is tender.

Serve hot, garnished with fresh cilantro.
