Ingredients

  • 8 sausages
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 red bell pepper, diced
  • 1 can (400g) chopped tomatoes
  • 1 cup beef or vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp oil

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large oven-safe skillet or casserole dish, heat the oil over medium heat.

  3. Add the sausages and cook until browned on all sides. Remove from the skillet and set aside.

  4. In the same skillet, add the onion and garlic. Cook until the onion is translucent and the garlic is fragrant.

  5. Add the carrots, celery, and bell pepper. Cook for another 5 minutes, until the vegetables start to soften.

  6. Stir in the chopped tomatoes, broth, thyme, oregano, salt, and pepper. Bring to a simmer.

  7. Return the sausages to the skillet, nestling them into the tomato sauce.

  8. Cover the skillet with a lid or aluminum foil and transfer to the preheated oven.

  9. Bake for 45 minutes, until the sausages are cooked through and the sauce has thickened.

  10. Serve hot, accompanied by crusty bread or mashed potatoes.
