How To Make Mexican Bake

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 packet of taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 8 small flour tortillas
  • 2 cups shredded Mexican blend cheese
  • Sour cream, guacamole, and chopped cilantro for topping

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  3. Add the diced onion, bell pepper, and minced garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.

  4. Stir in the taco seasoning, black beans, corn, and salsa. Simmer for 5 minutes to let the flavors combine.

  5. Grease a 9×13-inch baking dish. Place 4 tortillas in the bottom of the dish, overlapping them if needed.

  6. Spoon half of the meat mixture over the tortillas, spreading it out evenly.

  7. Sprinkle half of the shredded cheese over the meat.

  8. Repeat the layers with the remaining tortillas, meat mixture, and cheese.

  9. Cover the dish with aluminum foil and bake for 20 minutes.

  10. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  11. Serve hot, garnished with sour cream, guacamole, and chopped cilantro.
