Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 can (14.5 oz) corn, drained
  • 1 can (14.5 oz) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup cornmeal
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large skillet, cook ground beef, onion, green bell pepper, and garlic until beef is browned and vegetables are tender. Drain any excess fat.

  3. Add diced tomatoes, tomato sauce, corn, black beans, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine.

  4. In a separate bowl, prepare the cornmeal according to package instructions.

  5. Spread half of the cornmeal mixture into the bottom of a greased baking dish.

  6. Pour the beef and vegetable mixture over the cornmeal layer.

  7. Top with the remaining cornmeal mixture and sprinkle with shredded cheddar cheese.

  8. Bake in the preheated oven for 30 minutes or until cheese is melted and bubbly.

  9. Serve hot and enjoy!
