How To Make Barbacoa Marinated Lamb Cutlets

Ingredients

  • 8 lamb cutlets
  • 3 cloves of garlic, minced
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp dried oregano
  • 1 tsp ground coriander
  • 1/2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, combine minced garlic, ground cumin, paprika, dried oregano, ground coriander, chili powder, olive oil, salt, and pepper.

  2. Rub the marinade onto the lamb cutlets, making sure they are well coated. Let them marinate for at least 1 hour, or overnight for more flavor.

  3. Preheat the grill or oven to medium-high heat. Cook the lamb cutlets for about 4-5 minutes per side for medium-rare, or until desired doneness.

  4. Remove from heat and let the lamb cutlets rest for a few minutes before serving.

  5. Garnish with fresh cilantro and serve with your favorite side dishes.
