Ingredients

  • 1 lb lamb leg or shoulder, cut into cubes
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 4 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the lamb, bell peppers, zucchini, red onion, garlic, olive oil, oregano, thyme, paprika, salt, and pepper. Mix well to coat the ingredients evenly.

  3. Transfer the mixture to a baking sheet and spread it out in an even layer.

  4. Roast in the preheated oven for 25-30 minutes, or until the lamb is cooked to your desired level of doneness and the vegetables are tender.

  5. Remove from the oven and sprinkle with fresh parsley for garnish.

  6. Serve hot and enjoy!
