How To Make Three-hour Shoulder of Lamb

Ingredients
- 1 (4-5 lb) shoulder of lamb
- 4 cloves of garlic, minced
- 2 sprigs of rosemary
- 2 sprigs of thyme
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 cup of chicken or vegetable broth
Instructions

Preheat the oven to 325°F (163°C).

Score the lamb shoulder with a sharp knife, then rub minced garlic, olive oil, salt, and pepper all over the meat.

Place the lamb in a roasting pan and add the rosemary, thyme, and broth.

Cover the roasting pan tightly with foil and roast in the preheated oven for 3 hours, until the meat is fork-tender and falls off the bone.

Remove the foil, increase the oven temperature to 425°F (218°C), and roast for an additional 15 minutes to brown and crisp up the lamb.

Once done, remove from the oven and let it rest for a few minutes before carving.

Serve the shoulder of lamb with your choice of side dishes, like roasted potatoes and vegetables.
