Ingredients

  • 500 grams lamb, cut into bite-sized pieces
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise
  • 2 tablespoons vindaloo masala paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1 cup tomato puree
  • 1/2 cup water
  • Salt to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro leaves, for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add onions and sauté until golden brown.

  2. Add garlic, ginger, and green chilies. Cook for 1-2 minutes until fragrant.

  3. Add vindaloo masala paste, turmeric powder, cumin powder, coriander powder, and red chili powder. Cook for another minute.

  4. Add lamb pieces and cook until browned on all sides, about 5-7 minutes.

  5. Stir in tomato puree, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes until the lamb is tender.

  6. Garnish with cilantro leaves and serve hot with steamed rice or naan bread.
