Serves:

Ingredients

  • 1 1/2 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup sugar
  • 2 star anise pods
  • 1 vanilla bean, split and seeds scraped
  • 2 tsp powdered gelatin
  • 1 tbsp cold water

Instructions

  1. In a saucepan, combine the heavy cream, whole milk, sugar, star anise, and vanilla bean seeds and pod.

  3. Remove from heat, cover, and let steep for 30 minutes.

  4. Strain the mixture through a fine-mesh sieve, discarding the solids.

  8. Chill in the refrigerator for at least 6 hours, or until set.

  9. To serve, run a knife along the edges of the ramekins and invert onto plates.
