Ingredients

  • 1 pound of spring carrots, peeled and trimmed
  • 2 tablespoons of butter
  • 2 tablespoons of honey
  • 1 tablespoon of tarragon, chopped
  • 1 tablespoon of chives, chopped
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil and cook the carrots until tender, about 8-10 minutes. Drain and set aside.

  2. In a large skillet, melt the butter over medium heat. Add the honey and cook for 1 minute, until the mixture is bubbly.

  3. Add the cooked carrots to the skillet and toss to coat them in the honey-butter mixture. Cook for an additional 5-7 minutes, until the carrots are glazed and caramelized.

  4. Remove from heat and sprinkle with chopped tarragon, chives, salt, and pepper. Toss to combine.

  5. Transfer the glazed carrots to a serving platter and garnish with additional tarragon and chives, if desired.

  6. Serve hot as a delicious side dish.
