Ingredients

  • 8 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1/2 pound mushrooms, sliced
  • 2 tablespoons fresh sage, chopped
  • 1/4 cup shredded cheddar cheese

Instructions

  1. In a bowl, whisk the eggs, milk, salt, and pepper.

  2. In a large non-stick skillet, melt butter over medium-high heat.

  3. Add mushrooms and sauté until tender and golden, about 5-7 minutes.

  4. Add sage and cook for another minute.

  5. Pour egg mixture into the skillet and let it set for about a minute.

  6. Sprinkle shredded cheddar cheese over the top.

  7. Using a spatula, fold the omelette in half and cook for another 2-3 minutes until the cheese is melted and the eggs are set.

  8. Cut into 4 portions and serve hot.
