  • 1 large sweet potato, peeled and cubed
  • 1 large red bell pepper, seeded and chopped
  • 1 large yellow onion, peeled and chopped
  • 2 cups Brussels sprouts, trimmed and halved
  • 3 tbsp olive oil
  • 2 tbsp chopped fresh sage leaves
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.

  2. In a large bowl, toss together vegetables with olive oil, sage, lemon zest, salt, and pepper.

  3. Spread vegetables in a single layer onto a large baking sheet.

  4. Roast in preheated oven for 25-30 minutes, or until vegetables are tender and lightly browned, stirring halfway through.
