Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 tsp salt
  • 1/2 cup ricotta cheese
  • 1 tbsp chopped fresh marjoram
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp black pepper

Instructions

  1. In a bowl, mix flour and salt. Make a well in the center and add 2 eggs.

  2. Mix together until a dough forms, then knead for about 5 minutes until smooth.

  3. Cover dough and let rest for 30 minutes.

  4. In another bowl, mix ricotta cheese, marjoram, Parmesan cheese, pepper, and 1 egg.

  5. Roll out pasta dough and cut into circles.

  6. Spoon a small amount of ricotta mixture onto each circle, then fold and pinch edges.

  7. Boil ravioli in salted water for 3-4 minutes, or until they float to the surface.

  8. Serve with your favorite sauce.
