Ingredients

  • 4 large potatoes, peeled and grated
  • 1 cup wild mushrooms, chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

  2. In a large bowl, combine the grated potatoes, wild mushrooms, onion, garlic, flour, eggs, parmesan cheese, salt, and pepper. Mix well.

  3. Heat olive oil in a large skillet over medium heat.

  4. Take a handful of the potato mixture and shape it into a patty. Place it in the skillet and flatten with a spatula. Repeat with the remaining mixture.

  5. Cook the potato cakes for about 4-5 minutes on each side, or until golden brown and crispy.

  6. Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.

  7. Serve the wild mushroom and potato cakes hot as an appetizer or as a side dish.
