How To Make Wild Mushroom & Potato Cake

Ingredients
- 4 large potatoes, peeled and grated
- 1 cup wild mushrooms, chopped
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste
- Olive oil for frying
Instructions

Place the grated potatoes in a clean kitchen towel and squeeze out any excess moisture.

In a large bowl, combine the grated potatoes, wild mushrooms, onion, garlic, flour, eggs, parmesan cheese, salt, and pepper. Mix well.

Heat olive oil in a large skillet over medium heat.

Take a handful of the potato mixture and shape it into a patty. Place it in the skillet and flatten with a spatula. Repeat with the remaining mixture.

Cook the potato cakes for about 4-5 minutes on each side, or until golden brown and crispy.

Remove from the skillet and place on a paper towel-lined plate to drain any excess oil.

Serve the wild mushroom and potato cakes hot as an appetizer or as a side dish.
