Ingredients

  • 4 large whole wheat wraps
  • 1 cup of mixed salad greens
  • 1 cup of sliced cucumbers
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of sliced black olives
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of sliced red onions
  • 2 tablespoons of Dijon mustard
  • 2 tablespoons of olive oil
  • 1 tablespoon of red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together Dijon mustard, olive oil, red wine vinegar, salt, and pepper to make the mustard vinaigrette.

  2. Lay out the whole wheat wraps on a clean surface.

  3. Divide the mixed salad greens, sliced cucumbers, cherry tomatoes, sliced black olives, crumbled feta cheese, and sliced red onions evenly among the wraps.

  4. Drizzle the mustard vinaigrette over the veggies.

  5. Roll up the wraps tightly, tucking in the sides as you go.

  6. Cut each wrap in half diagonally and serve.
