How To Make Vegetarian Spinach and Mushroom Casserole
A cheesy and hearty casserole packed with spinach and savory mushrooms.

Ingredients
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 10 oz spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 8 oz pasta, cooked
Instructions

Preheat oven to 375°F.

Heat oil in a large pan over medium heat. Add onion and garlic and cook until softened.

Add mushrooms and cook until browned, then add spinach and cook until wilted.

In a separate bowl, mix together ricotta cheese, Parmesan cheese, salt, and pepper.

Combine the pasta, vegetable mixture, and cheese mixture in a casserole dish.

Bake for 25-35 minutes until heated through and bubbly.
