Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 10 oz spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 8 oz pasta, cooked

Instructions

  1. Preheat oven to 375°F.

  2. Heat oil in a large pan over medium heat. Add onion and garlic and cook until softened.

  3. Add mushrooms and cook until browned, then add spinach and cook until wilted.

  4. In a separate bowl, mix together ricotta cheese, Parmesan cheese, salt, and pepper.

  5. Combine the pasta, vegetable mixture, and cheese mixture in a casserole dish.

  6. Bake for 25-35 minutes until heated through and bubbly.
