How To Make Vegetarian Eggplant Parmesan Casserole Recipe

A deliciously cheesy and flavorful casserole that highlights the fresh taste of eggplant.

Ingredients

  • 2 large eggplants, sliced into thin rounds
  • 2 cups of marinara sauce
  • 1/4 cup of chopped fresh basil
  • 1/2 cup of grated Parmesan cheese
  • 2 cups of shredded mozzarella cheese
  • 1/4 tsp of black pepper
  • 1/4 tsp of garlic powder
  • 1/4 tsp of onion powder
  • 2 tbsp of olive oil

Instructions

  1. Preheat oven to 375°F.

  2. Grease a 9×13 inch baking dish with olive oil.

  3. Arrange the eggplant slices in a single layer on the bottom of the dish.

  4. Sprinkle with black pepper, garlic powder, onion powder, and chopped basil.

  5. Spoon the marinara sauce over the eggplant slices.

  6. Sprinkle with grated Parmesan cheese.

  7. Repeat layers with the remaining eggplant slices, basil, marinara sauce, and Parmesan cheese.

  8. Top with shredded mozzarella cheese.

  9. Bake for 40 minutes, or until the cheese is melted and bubbly.

  10. Serve hot and enjoy!
