How To Make Vegan Lentil Curry

Ingredients
- 1 cup dried lentils
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp coriander
- 1 tsp paprika
- 1 can (400ml) coconut milk
- 1 cup vegetable broth
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Rinse the lentils and set aside.

In a large pot, heat some oil and sauté the onions until translucent.

Add the garlic, ginger, cumin, turmeric, coriander, and paprika. Cook for a minute until fragrant.

Add the lentils, coconut milk, vegetable broth, and lemon juice. Season with salt and pepper.

Bring to a boil, then reduce heat and simmer for about 40 minutes or until the lentils are tender.

Serve hot, garnished with fresh cilantro. Enjoy!
