How To Make Vegan Lentil Curry

Serves:

Ingredients

  • 1 cup dried lentils
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils and set aside.

  2. In a large pot, heat some oil and sauté the onions until translucent.

  3. Add the garlic, ginger, cumin, turmeric, coriander, and paprika. Cook for a minute until fragrant.

  4. Add the lentils, coconut milk, vegetable broth, and lemon juice. Season with salt and pepper.

  5. Bring to a boil, then reduce heat and simmer for about 40 minutes or until the lentils are tender.

  6. Serve hot, garnished with fresh cilantro. Enjoy!
