Ingredients

  • 2 sweet potatoes, peeled and diced
  • 1 cup peas, thawed if frozen
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 2 eggs, beaten
  • Cooking oil for frying

Instructions

  1. Boil the sweet potatoes until tender. Drain and mash them in a mixing bowl.

  2. Add the peas, breadcrumbs, Parmesan cheese, salt, black pepper, garlic powder, and paprika to the mashed sweet potatoes. Mix well to combine.

  3. Shape the mixture into small balls or puffs.

  4. Dip each puff into the beaten eggs, then coat with breadcrumbs.

  5. Heat the cooking oil in a deep skillet or fryer.

  6. Fry the puffs in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on a paper towel-lined plate.

  7. Serve the sweet potato & pea puffs warm as a delicious appetizer or snack.
