How To Make Summery Stuffed Squash

Ingredients
- 4 small squash
- 1 cup quinoa
- 1/2 cup diced bell pepper
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Cut the tops off the squash and hollow out the centers.

In a pot, cook the quinoa according to package instructions.

In a bowl, mix together the cooked quinoa, bell pepper, cucumber, red onion, parsley, lemon juice, olive oil, salt, and pepper.

Stuff the mixture into the hollowed-out squash.

Place the stuffed squash on a baking sheet and bake for 40-45 minutes, or until the squash is tender.
