Ingredients

  • 4 small squash
  • 1 cup quinoa
  • 1/2 cup diced bell pepper
  • 1/2 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut the tops off the squash and hollow out the centers.

  3. In a pot, cook the quinoa according to package instructions.

  4. In a bowl, mix together the cooked quinoa, bell pepper, cucumber, red onion, parsley, lemon juice, olive oil, salt, and pepper.

  5. Stuff the mixture into the hollowed-out squash.

  6. Place the stuffed squash on a baking sheet and bake for 40-45 minutes, or until the squash is tender.

  7. Serve hot and enjoy!
