- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sunflower seeds
- dressing:
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell peppers, red onion, cilantro, and sunflower seeds.

In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
