How To Make Squash & Sage Pithivier

Ingredients
- 1 small butternut squash, peeled and diced
- 1 tbsp olive oil
- 2 tbsp fresh sage, chopped
- Salt and pepper to taste
- 1 sheet puff pastry
- 1 egg, beaten
Instructions

Preheat the oven to 400°F (200°C).

Toss the diced squash with olive oil, sage, salt, and pepper. Roast in the oven for 20 minutes or until tender.

Roll out the puff pastry into a rectangle. Place the roasted squash mixture in the center of the pastry.

Fold the pastry over the filling, sealing the edges with beaten egg. Score the top of the pastry with a sharp knife.

Brush the pastry with beaten egg and bake for 25 minutes or until golden and crispy.
