How To Make Squash & Sage Pithivier

Ingredients

  • 1 small butternut squash, peeled and diced
  • 1 tbsp olive oil
  • 2 tbsp fresh sage, chopped
  • Salt and pepper to taste
  • 1 sheet puff pastry
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Toss the diced squash with olive oil, sage, salt, and pepper. Roast in the oven for 20 minutes or until tender.

  3. Roll out the puff pastry into a rectangle. Place the roasted squash mixture in the center of the pastry.

  4. Fold the pastry over the filling, sealing the edges with beaten egg. Score the top of the pastry with a sharp knife.

  5. Brush the pastry with beaten egg and bake for 25 minutes or until golden and crispy.

  6. Serve hot and enjoy!
