How To Make Spicy Vegetable & Quinoa One-Pot Recipe

Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, diced
- 1 zucchini, diced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Rinse the quinoa thoroughly under cold water. In a pot, bring the vegetable broth to a boil and add the quinoa. Reduce heat to low and simmer for 15 minutes or until quinoa is cooked and fluffy. Set aside.

In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until fragrant.

Add the bell pepper, carrots, and zucchini to the pan. Cook for 5 minutes or until vegetables are tender.

Sprinkle the paprika, cayenne pepper, cumin, salt, and pepper over the vegetables. Stir well to coat the vegetables evenly.

Add the cooked quinoa to the pan and mix everything together until well combined. Cook for an additional 2-3 minutes to allow the flavors to meld together.

Serve the spicy vegetable and quinoa mixture in bowls, garnished with fresh cilantro.
