  • 4 cups mixed root vegetables (carrots, parsnips, turnips, beets), cut into small cubes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a large bowl, toss the mixed root vegetables with olive oil, honey, black pepper, and salt until well coated.

  3. Spread the vegetables evenly on the prepared baking sheet in a single layer.

  4. Roast in the preheated oven for 40 minutes, or until the vegetables are tender and golden brown, stirring once halfway through cooking.

  5. Remove from the oven and let cool for a few minutes before serving.
