Ingredients

  • 1 can cannellini beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 4 slices baguette
  • Fresh basil leaves, for garnish

Instructions

  1. In a large bowl, add the cannellini beans and use a fork or potato masher to smash them until semi-smooth.

  2. Stir in the minced garlic, lemon juice, 1 tablespoon of olive oil, salt, and pepper.

  3. Preheat the broiler.

  4. Brush the baguette slices with the remaining olive oil and place them on a baking sheet.

  5. Broil the baguette slices for 2-3 minutes on each side until golden and crispy.

  6. Remove from the oven and let them cool slightly.

  7. Spread a spoonful of the smashed cannellini beans onto each baguette slice.

  8. Garnish with fresh basil leaves.

  9. Serve immediately.
