Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes
  • 2 cans cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 bunch kale, stems removed and leaves chopped
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and cook until soft.

  2. Add garlic, cumin, paprika, and chili flakes. Cook for 1-2 minutes until fragrant.

  3. Add cannellini beans and vegetable broth. Bring to a boil.

  4. Reduce heat and simmer for 15-20 minutes.

  5. Add kale and cook until wilted, about 5 minutes.

  6. Season with salt and pepper to taste.
