How To Make Selkirk Bannock

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tsp active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup butter, softened
  • 1/2 cup raisins
  • 1/4 cup currants
  • 1 egg, beaten

Instructions

  1. In a large mixing bowl, combine the flour, sugar, and yeast. Mix well.

  2. Add the warm milk and softened butter to the dry ingredients. Stir until a dough forms.

  3. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.

  4. Place the dough back into the mixing bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

  5. Preheat the oven to 375°F (190°C).

  6. Punch down the dough and knead in the raisins and currants.

  7. Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.

  8. Brush the beaten egg over the top of the loaf.

  9. Bake for 35-40 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.

  10. Let the Selkirk Bannock cool on a wire rack before slicing and serving.
