How To Make Selkirk Bannock

Ingredients
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tsp active dry yeast
- 1/2 cup warm milk
- 1/4 cup butter, softened
- 1/2 cup raisins
- 1/4 cup currants
- 1 egg, beaten
Instructions

In a large mixing bowl, combine the flour, sugar, and yeast. Mix well.

Add the warm milk and softened butter to the dry ingredients. Stir until a dough forms.

Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.

Place the dough back into the mixing bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

Preheat the oven to 375°F (190°C).

Punch down the dough and knead in the raisins and currants.

Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.

Brush the beaten egg over the top of the loaf.

Bake for 35-40 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.

Let the Selkirk Bannock cool on a wire rack before slicing and serving.
