How To Make Instant Pot Sambar Recipe
A flavorful and nutritious South Indian lentil soup made in an instant pot.
Serves:
Ingredients
- ½ cup toor dal (yellow pigeon peas)
- 2 cups water
- 2 tbsp vegetable oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 onion, chopped
- 2 garlic cloves, minced
- 1-inch fresh ginger, grated
- 2 green chilies, sliced
- 10-12 curry leaves
- 2 medium-sized tomatoes, chopped
- 1 tbsp sambar powder
- 1 tsp turmeric powder
- 1 tsp salt
- 1 small carrot, chopped
- 5-6 okra, chopped
- 1 small eggplant, chopped
- 1 tbsp tamarind pulp
- 1 tbsp jaggery/brown sugar
- 2 cups water
Instructions

Wash the toor dal and add it to the inner pot of the instant pot along with two cups of water.

Pressure cook for 10 minutes and set aside.

Turn on the sauté function and heat oil in the inner pot.

Add mustard and cumin seeds and let them splutter.

Add onions, garlic, ginger, green chilies, and curry leaves, and sauté until the onions turn translucent.

Add tomatoes and cook until they turn mushy.

Add sambar powder, turmeric, and salt to the pot and mix well.

Add chopped vegetables and mix until they are coated with the masala.

Add tamarind pulp, jaggery, and water and mix well.

Add the cooked toor dal to the pot and mix well.

Close the lid, set the vent to sealing, and pressure cook on high for 15 minutes.

Allow the pressure to release naturally before opening the lid.

Serve hot with rice or idli.
