Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp fresh rosemary, chopped
  • 1/4 cup pitted olives, chopped
  • 1/2 cup goat’s cheese, crumbled
  • 1/2 cup milk
  • 1 large egg
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, baking powder, salt, rosemary, and olives.

  3. In a separate bowl, whisk together the milk, egg, and olive oil. Pour the wet ingredients into the dry ingredients and stir until just combined.

  4. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart. Top each scone with crumbled goat’s cheese.

  5. Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and cooked through.

  6. Remove from the oven and let cool for a few minutes before serving.
