Ingredients

  • 1 medium cauliflower, cut into florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tbsp harissa paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 cup basmati rice
  • 2 cups vegetable broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the garlic and onion, sauté until fragrant.

  2. Add the cauliflower florets and cook for 5 minutes, until slightly tender.

  3. Stir in the harissa paste, cumin, and coriander, coating the cauliflower evenly.

  4. Add the basmati rice and vegetable broth to the skillet. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.

  5. Season with salt and pepper to taste, and garnish with fresh cilantro before serving.
