How To Make Harissa Cauliflower Pilaf

Ingredients
- 1 medium cauliflower, cut into florets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tbsp harissa paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 cup basmati rice
- 2 cups vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large skillet, heat the olive oil over medium heat. Add the garlic and onion, sauté until fragrant.

Add the cauliflower florets and cook for 5 minutes, until slightly tender.

Stir in the harissa paste, cumin, and coriander, coating the cauliflower evenly.

Add the basmati rice and vegetable broth to the skillet. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until the rice is cooked and liquid is absorbed.

Season with salt and pepper to taste, and garnish with fresh cilantro before serving.
