How To Make Poor Knights of Windsor with Blackberry Compote

Ingredients
- 8 slices of day-old bread
- 4 large eggs
- 1/2 cup milk
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 2 tbsp unsalted butter
- 1 cup blackberries
- 2 tbsp honey
- 1 tsp lemon zest
- Powdered sugar, for dusting
Instructions

In a shallow dish, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt.

Heat a large non-stick skillet over medium heat and melt 1 tablespoon of butter.

Dip each slice of bread into the egg mixture, coating both sides evenly.

Place the bread into the skillet and cook until golden brown, about 2-3 minutes per side.

Repeat with the remaining slices of bread, adding more butter to the skillet as needed.

In a small saucepan, combine blackberries, honey, and lemon zest. Cook over medium heat, stirring occasionally, until the blackberries break down and the mixture thickens slightly, about 5 minutes.

Serve the French toast with a generous spoonful of the blackberry compote on top.
