  • 8 slices of day-old bread
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp unsalted butter
  • 1 cup blackberries
  • 2 tbsp honey
  • 1 tsp lemon zest
  • Powdered sugar, for dusting

Instructions

  1. In a shallow dish, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt.

  2. Heat a large non-stick skillet over medium heat and melt 1 tablespoon of butter.

  3. Dip each slice of bread into the egg mixture, coating both sides evenly.

  4. Place the bread into the skillet and cook until golden brown, about 2-3 minutes per side.

  5. Repeat with the remaining slices of bread, adding more butter to the skillet as needed.

  6. In a small saucepan, combine blackberries, honey, and lemon zest. Cook over medium heat, stirring occasionally, until the blackberries break down and the mixture thickens slightly, about 5 minutes.

  7. Serve the French toast with a generous spoonful of the blackberry compote on top.

  8. Dust with powdered sugar before serving.
