Ingredients

  • 1 medium cauliflower, cut into florets
  • 1 cup grated cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Place the cauliflower florets in a microwave-safe dish and cover with a microwave-safe lid or plastic wrap.

  2. Microwave on high for 5 minutes, or until the cauliflower is tender.

  3. In a separate microwave-safe bowl, melt the butter in the microwave.

  4. Stir in the flour until well combined, then gradually whisk in the milk.

  5. Microwave the sauce mixture for 2-3 minutes, or until thickened, stirring every minute.

  6. Stir in the cheddar cheese, Parmesan cheese, garlic powder, salt, and pepper until the cheese is melted and the sauce is smooth.

  7. Pour the cheese sauce over the cooked cauliflower and stir to coat evenly.

  8. Microwave for an additional 2-3 minutes, or until the cheese is bubbly and golden.

  9. Serve hot as a delicious side dish.
