How To Make New Potatoes with Spinach & Capers

Ingredients
- 1 lb new potatoes, halved
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 2 tbsp capers
- Salt and pepper, to taste
Instructions

In a large pot, bring water to a boil and cook the new potatoes until tender, about 15 minutes. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.

Add the cooked new potatoes to the skillet and cook for another 5 minutes, stirring occasionally.

Add the spinach and capers to the skillet and cook until the spinach wilts, about 2-3 minutes.

Season with salt and pepper, to taste.

Remove from heat and serve hot.
