How To Make New Potatoes with Spinach & Capers

Ingredients

  • 1 lb new potatoes, halved
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 2 tbsp capers
  • Salt and pepper, to taste

Instructions

  1. In a large pot, bring water to a boil and cook the new potatoes until tender, about 15 minutes. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant, about 1 minute.

  3. Add the cooked new potatoes to the skillet and cook for another 5 minutes, stirring occasionally.

  4. Add the spinach and capers to the skillet and cook until the spinach wilts, about 2-3 minutes.

  5. Season with salt and pepper, to taste.

  6. Remove from heat and serve hot.
