How To Make Muddled Potato & Mozzarella Tortilla

Ingredients
- 4 potatoes, peeled and diced
- 1/2 cup mozzarella cheese
- 1/4 cup diced onions
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 4 eggs
- Fresh parsley, for garnish
Instructions

In a large pan, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.

Add the cooked potatoes to the pan and muddle them with a fork or potato masher until slightly mashed.

Sprinkle the salt, black pepper, and paprika over the potatoes and stir to combine.

Spread the potato mixture evenly in the pan and sprinkle the mozzarella cheese on top.

Crack the eggs on top of the potato mixture, evenly spacing them apart.

Cover the pan and cook on low heat for about 20 minutes, or until the eggs are cooked to your liking.

Garnish with fresh parsley and serve hot.
