Ingredients

  • 1 cup cashew butter
  • 1/2 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (180°C).

  2. In a mixing bowl, cream together cashew butter, coconut sugar, egg, and vanilla extract.

  3. Mix in baking soda, almond flour, coconut flour, and salt until well-combined.

  4. Roll dough into balls and place on parchment-lined baking sheet.

  5. Flatten each cookie ball with the back of a fork.

  6. Bake for 12-15 minutes or until lightly golden.

  7. Allow cookies to cool for 5 minutes before transferring to a wire rack.
