How To Make Malfatti Recipe

Ingredients

  • 1 pound fresh spinach leaves
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 2 eggs
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter
  • 1/4 cup grated Parmesan cheese, for serving

Instructions

  1. Blanch the spinach leaves in boiling water for 2 minutes, then drain and squeeze out the excess water. Chop the spinach finely.

  2. In a large bowl, combine the chopped spinach, ricotta cheese, grated Parmesan cheese, bread crumbs, eggs, nutmeg, salt, and pepper. Mix well.

  3. Gradually add the flour to the spinach mixture, until a soft and sticky dough forms.

  4. Bring a large pot of salted water to a boil. Drop spoonfuls of the spinach mixture into the boiling water, working in batches. Cook for about 5-7 minutes, or until the malfatti rise to the surface.

  5. Using a slotted spoon, transfer the cooked malfatti to a serving dish.

  6. In a separate pan, melt the butter over medium heat until it starts to brown. Pour the browned butter over the malfatti.

  7. Sprinkle the malfatti with grated Parmesan cheese and serve hot.
