Ingredients

  • 1.5 lbs new potatoes, halved
  • 2 tbsp olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 425°F (220°C).

  2. In a large bowl, combine olive oil, lemon zest, lemon juice, garlic, dried thyme, salt, and pepper.

  3. Add the halved new potatoes to the bowl and toss until well coated with the mixture.

  4. Spread the potatoes in a single layer on a baking sheet.

  5. Roast in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy.

  6. Remove from the oven and sprinkle with fresh parsley before serving.
