  • 4 large potatoes, cut into chunks
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine the potatoes, olive oil, rosemary, thyme, garlic powder, salt, and pepper. Toss until the potatoes are evenly coated.

  3. Transfer the potatoes to a baking sheet and spread them out in a single layer.

  4. Roast in the preheated oven for 40-45 minutes, flipping halfway through, until the potatoes are golden and crispy.

  5. Remove from the oven and serve hot.
