How To Make Freezable Herby Falafel

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 small onion, chopped
- 3 cloves of garlic
- 1 cup fresh herbs (such as parsley, cilantro, and mint), chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons all-purpose flour
- Vegetable oil, for frying
Instructions

In a food processor, combine the chickpeas, onion, garlic, herbs, cumin, coriander, salt, and pepper. Pulse until well combined but still slightly chunky.

Transfer the mixture to a bowl and stir in the flour. Mix well.

Shape the mixture into small patties, about 2 inches in diameter.

Heat vegetable oil in a large skillet over medium heat. Fry the falafel in batches until golden brown and crispy, about 3-4 minutes per side.

Remove the falafel from the skillet and drain on paper towels.

Serve hot with tahini sauce or yogurt sauce.
