Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 3 cloves of garlic
  • 1 cup fresh herbs (such as parsley, cilantro, and mint), chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • Vegetable oil, for frying

Instructions

  1. In a food processor, combine the chickpeas, onion, garlic, herbs, cumin, coriander, salt, and pepper. Pulse until well combined but still slightly chunky.

  2. Transfer the mixture to a bowl and stir in the flour. Mix well.

  3. Shape the mixture into small patties, about 2 inches in diameter.

  4. Heat vegetable oil in a large skillet over medium heat. Fry the falafel in batches until golden brown and crispy, about 3-4 minutes per side.

  5. Remove the falafel from the skillet and drain on paper towels.

  6. Serve hot with tahini sauce or yogurt sauce.
