How To Make Chunky Cheddar & Celeriac Soup

Ingredients
- 1 celeriac, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

In a large pot, heat some olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the celeriac to the pot and cook for a few more minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the celeriac is tender.

Using an immersion blender or regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the shredded cheddar cheese until melted.

Stir in the milk and season with salt and pepper. Cook for a few more minutes, until heated through.

Serve the soup hot, garnished with chopped fresh parsley.
