Ingredients

  • 4 ears of corn, husked
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced

Instructions

  1. Preheat a grill or grill pan over medium-high heat.

  2. Rub the corn with olive oil and season with salt and pepper.

  3. Grill the corn for 10-12 minutes, turning occasionally, until charred and cooked through.

  4. Remove the corn from the grill and allow it to cool slightly. Cut the kernels from the cobs and transfer to a large bowl.

  5. Add the cherry tomatoes, feta cheese, and cilantro to the bowl with the corn.

  6. In a small bowl, whisk together lime juice, extra virgin olive oil, minced garlic, salt, and pepper.

  7. Pour the dressing over the corn mixture and toss to combine.

  8. Serve the charred corn and feta salad immediately or refrigerate until ready to serve.
