How To Make Charred Corn & Feta Salad

Ingredients
- 4 ears of corn, husked
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
Instructions

Preheat a grill or grill pan over medium-high heat.

Rub the corn with olive oil and season with salt and pepper.

Grill the corn for 10-12 minutes, turning occasionally, until charred and cooked through.

Remove the corn from the grill and allow it to cool slightly. Cut the kernels from the cobs and transfer to a large bowl.

Add the cherry tomatoes, feta cheese, and cilantro to the bowl with the corn.

In a small bowl, whisk together lime juice, extra virgin olive oil, minced garlic, salt, and pepper.

Pour the dressing over the corn mixture and toss to combine.
