How To Make Cauliflower Rarebits

Ingredients
- 1 small cauliflower, cut into florets
- 4 slices of crusty bread
- 2 cups of grated cheddar cheese
- 1 tbsp of Worcestershire sauce
- 2 tsp of Dijon mustard
- 2 eggs
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Steam the cauliflower florets until they are tender, about 5-7 minutes. Drain and set aside.

Toast the slices of bread until they are golden brown. Set aside.

In a small saucepan, melt the grated cheddar cheese over low heat. Stir in the Worcestershire sauce and Dijon mustard until well combined.

In a separate bowl, whisk the eggs and season with salt and pepper.

Slowly pour the melted cheese mixture into the eggs while continuously whisking, to prevent the eggs from scrambling.

Place the cauliflower florets on top of the toasted bread slices. Pour the cheese and egg mixture over the cauliflower.

Bake in the preheated oven for about 15 minutes, or until the cheese is bubbly and golden brown.

Garnish with fresh parsley before serving.
