Ingredients
- 2 medium carrots, peeled and chopped
- 1/2 cup red lentils
- 2 cups water or vegetable broth
- 1/2 teaspoon cumin
- 1/4 teaspoon turmeric
- 1/4 teaspoon garlic powder
Instructions

In a saucepan, combine the carrots, red lentils, water or vegetable broth, cumin, turmeric, and garlic powder.

Bring the mixture to a boil over medium heat, then reduce the heat to low and let it simmer for about 15-20 minutes or until the carrots and lentils are tender.

Remove the saucepan from the heat and let it cool slightly.

Transfer the mixture to a blender or food processor and blend until smooth and creamy.

Serve the carrot and red lentil purée warm or at room temperature.

Store any leftovers in an airtight container in the refrigerator for up to three days.
